“Why grubs? What made you think of this as a business idea? How in the world did you get started with this concept?” are typically the questions Akissi Stokes, founder and owner, is asked when she tells people about her business products infused with sustainable protein - mealworms or more appropriately grubs.
During her and her partner’s international travels, they at times observed communities challenged with deforestation, drought, and a shortage of quality, affordable food. Not to mention, during domestic travels, the observation of food security issues embattled by many low-income communities.
These observations deeply disturbed her and him. So she sought out to be a part of the solution, plus promote the conversation about deplenishing natural resources and access to nutritious, affordable food.
During her research she ran across a 2013 United Nations report the promoted insects as a potentially viable solution to tackle food insecurity based on a book released by the Food and Agricultural Organization (FAO). In the book, the FAO predicted that by 2030, over 9 million people will need to be fed, along with the billions of animals raised annually for food and as pets. Meanwhile, land and water pollution from intensive livestock production and over-grazing are leading to forest degradation, thereby contributing to climate change.
Eureka, insects was the answer she was seeking to her question. After months of research, she landed on raising and harvesting crickets, but the they didn’t get along too well. Then after researching work by some German entomologists, she stumbled upon the unwittingly, high in protein mealworm. As a completely recyclable, highly sustainable food source with all nine (9) amino acids, she knew she had found her insect muse - the grub.
This decision sparked the launch of WUNDERgrubs in 2016 aimed at promoting the advocacy, awareness, and appreciation of entomophagy through educational programming, tastings, and other special events. In addition, WUNDERgrubs is focused on providing a healthy, affordable ,and accessible protein alternative that requires limited land and water resources, plus emits no gas emissions to address food and feed insecurity.
